It's taken just over twenty years for the chef Lorenzo Callegari to transform a trattoria serving traditional dishes into one of the focal points of fine dining in Trentino, whose fame has spread beyond the local and national borders. It was in 1999 that Lorenzo newly emerged from an intense learning experience in Italy and abroad, took a gamble on himself and his passion and took over the premises along with his parents and, from that time onwards, month after month and year after year, forged it into his idea of what cooking should be carefully crafted without being haughty, refined but practical, inspired by the local surroundings, but at the same time not unaffected by the experience built up in his travels around the world. This approach brought its awards immediately, word got around and a huge variety of customers found their way to Sorni in Lavis, from all over Italy and beyond.
